A brisket is a large cut of meat that comes from the chest area of a cow. It is one of the nine beef primal cuts.

A full “packer” brisket is made up of two distinct muscles. The point and the flat. Since our brisket contains both the leaner flat and the smaller, fattier point, it really offers something for everyone around the table! The texture in our Irish Grass Fed Briskets is excellent, with a good grain, & more intramuscular fat through the Point End.
The flat comes from the area that is attached to the breastbone of a cow and is typically the portion of whole beef brisket that sliced brisket comes from. also commonly used for pastrami.
The point comes from the area that is attached to the cow’s ribcage and has a great deal of marbling throughout the cut. It is much thicker and smaller than the flat portion but is packed full of flavour due to the higher fat content. It makes fantastic minced beef that can be used for burgers. This portion of the brisket is ideal for shredding and is also the portion of the brisket you will use to make brisket burnt ends.

We update the dropdowns daily to reflect current stock, so the weight you select is the exact weight you receive!
We store our briskets vacuum packed and blast frozen, and it will only be taken out the freezer on the day of your dispatch in temperature controlled packaging. Due to this, we will not dispatch on a Friday to avoid delays caused by the weekend and to ensure your brisket arrives in perfect condition.
